1.鲳鱼洗净

2.鱼身较大,用到把鱼身厚的部位划几刀

3.准备葱姜蒜

4.热锅倒入油,油温6分热先加入一汤匙生粉沸腾30秒(这样煎鱼就不会油花四溅,而且还能保证完整的鱼皮)

5.下入鲳鱼煎至两面金黄后捞起

6.重新起锅倒入底油下入姜蒜爆香

7.再把料酒加入

8.加入生抽和老抽

9.加入开水,水量能浸没鱼身的一半,大火烧开转中小火烧至鱼肉入味

10.转大火收汁后再淋入少许香油熄火出锅

11.撒上葱花上桌
小窍门&温馨提示
1.香油也就是芝麻油,加入进去能增香去腥,使得菜肴增色。
2.煎鱼的油有一股苦味,烹饪时候底油要重新加入。
